Well into mango season, driving past Kodo village in Niger State, Nigeria, my mother and I came across women selling mangoes under a bush of mango trees. Under the mango trees, we bought, talked and tasted the ripened fruits. These mangoes have absolutely no air miles as we are lucky to be able to enjoy them so close to their source.
We took these juicy gifts home, shared some amongst our neighbours and I fantasised about all the different ways I can enjoy the delights of the ripened fruits. By nightfall, eager to create, I decided on something that would sit in the freezer, perfectly set for a mid-day refresher by the following day. I decided to make Mango Fool.
Preparation: 6 – 24 hrs
Feeds 2 hungry tummies
- 3 medium ripe mangoes
- 240ml /1 cup of heavy cream
- 1 tbs of moringa powder
These sunny cups are delicious and satisfying, rather easy to make, with no sugar needed and the kids can pitch in!
1. Peel the mangoes and put the flesh in a blender, add the heavy cream and moringa powder, my super green of choice since we have lots of moringa trees around my mother’s house.🍃 Moringa powder is sold in farmer’s markets, health food stores or if you can get them fresh, dry the leaves indoors for a few days, blend and sieve to get rid of the little stems.
2. Whizz whizz whizz! with our ingredients in the blender, blend until smooth and pour into a glass cup like I did or any container of your choice. I topped it with chunks of mango for a contrast in taste and texture.
3. Put your mixture in the freezer and after a few hours or the next day you have your mango fool or just call it ice cream to fool the kids, however old or young they may be!
